Petite Beet Mix
A beautiful, petite mix of 4 different beet varieties.
Golf ball-sized roots are especially sweet after being overwintered in our cold Missouri clay.
An explosion of beautiful green tops make this a versatile vegetable. Beet greens can be used as a substitute for spinach
- (Root) Ranges from sweet to earthy
- (Leaves) Crisp, crunchy, stems + leaves that are delicious cooked or in a salad. A great substitute for spinach or Swiss chard.
- (Gold) 'Touchstone',
- (Red) 'Shiraz',
- (Red-Gold), 'Three Root Grex'
Separate leaves from roots, leaving about 2" of stem to avoid roots bleeding.. Dry leaves thoroughly in salad spinner. Dry roots completely.
Wrap loosely in tea towel, making sure not to crowd or overpack. Place in sealable glass container.
